How do you start a co-op game that allows the second player to save their progress? It is not allowing us to select a second profile. Am I missing where to choose it or something? BLEH.

Are you referring to that notice that pops up when player 2 joins - something about the host player is too far ahead, progress will not be saved? Bounce out and have player 2 host the game. Once you complete a quest new to both of you, you'll both get credit for it.
